This is a simple recipe to quickly make something that’s nice and filling. It leverages my very basic chimichurri recipe.
Essentially, you marinate mushrooms in some savoury sauces, sautée them, and coat them in chimichurri.
1 pack of mushrooms (mixed, field mushrooms)
1/4 to 1/3 cup of olive oil
1 tbsp. balsamic vinegar
1 tbsp. soy sauce
1/2 tsp. crushed dried rosemary (or more fresh)
Toss the mushrooms with all of the above mentioned ingredients in a pot or pan and let sit for about 10 minutes.
Heat on medium and sautée until the mushrooms are cooked.
Serve topped with a simple chimichurri recipe.
