This coleslaw can be a vegan coleslaw if you decide to use vegan mayonnaise. No dairy is used.
This coleslaw has a thinner dressing than usual and is therefore less creamy. Pickles and capers add a tangy flavour.
1/2 a cabbage (red or green, shredded)
1 tbsp. chopped onion (red or white)
1/2 cup of shredded carrots
1 tbsp. capers
1 pickle, chopped
1/4 cup of mayonnaise (can be vegan)
juice of half a lemon
1 tbsp. of apple cider vinegar
salt & pepper to taste
Combine all the coleslaw ingredients together.
Combine all dressing ingredients together with a whisk.
Pour the dressing on the coleslaw and toss.
Let sit for at least an hour before serving.
