There’s nothing quite as comforting and satisfying as the full fat and savoury flavour of a grilled cheese sandwich.
Whether you like your grilled cheese sandwiches with ketchup or not, we can all agree that they’re delicious and nostalgic.
This is a fancier version than your childhood Wonder bread and Kraft singles grilled cheese sandwich. It uses sourdough bread, brie cheese, cultured butter, and caramelized onions.
Ingredients
2 slices of sourdough bread
enough Brie to cover the bread
2 tsp. of butter
1-2 tbsp. of caramelized onions
Preparation
Preheat a pan on medium high heat. I like to use a cast iron pan for this one, but a stainless steel frying pan works as well.
Butter the outer sides of the sandwich. On the inside of the sandwich, combine the brie and caramelized onions. Close the sandwich, dry sides on the inside and buttery sides on the outside.
The pan should be hot by now. Check that it sizzles from a drop of water.
Put the sandwich on the frying pan and let it sit for a few minutes, checking sporadically with a metal spatula, ensuring that it’s toasting nicely and not burning.
When it’s reached your desired level of doneness, flip it over. Careful not to make your grilled cheese sandwich explode everywhere.
